Sweet potatoes or Potato: Sweet potato or regular potato serves as a starchy base in fritters, adding texture and helping to bind the ingredients.

How to steam broccoli for fritters

There are 3 main ways to steam broccoli: boiling in a pot, steaming in a microwave or using a steamer basket. Today we are preparing our broccoli through steaming/blanching.

Start by preparing the broccoli. After choosing the right one, wash under clean cold running water to remove dirt. Use a knife to trim the stalk. Separate the florets.

To blanch, put them in boiling water for 5 minutes or until tender. Drain excess water to avoid sogginess. Finely chop the broccoli and set aside.

In a mixing bowl, mix the already prepare broccoli with mashed sweet potato or potato, beaten egg, and or oat flour. Stir everything together until all the ingredients are mixed evenly.

Take small portions of the mixture and shape them into small fritters or patties, about the size of your palm and suitable for your baby’s grip.

Heat a non-stick skillet or frying pan over medium heat and add a small amount of olive oil or coconut oil. Carefully place the formed fritters onto the heated skillet and cook for 2-3 minutes on each side, or until they are golden brown and crispy. To flip them carefully, you can use a spatula.
