This Señor Rico Rice pudding is one of my favourite dessert. The recipe uses simple ingredients which include rice, milk, sugar, vanilla, and other flavours. It is 100% vegan, gluten-free and can be customized into a diary-free dessert.

Recipe substitutions

Don't have all the ingredients on hand? No worries! Use these instead:

  • Arborio or medium-grain rice can be used instead of white rice for a creamier texture. I prefer using brown rice fir my pudding recipe.
  • If you prefer a less sweet pudding, swap the sweetened condensed milk for an equal amount of regular milk and add sugar to taste.
  • For a dairy-free version, use coconut milk and sweetened condensed coconut milk instead of dairy-based products to make a coconut milk rice pudding.
  • Add ground chocolate chips instead of vanilla for a chocolate rice pudding.

How to make Senor Rico Rice Pudding at home

In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and most of the water is absorbed.

Add sweetened condensed milk, evaporated milk, and vanilla extract as your stir. Cook over medium heat, stirring occasionally, for an additional 20-25 minutes, or until the pudding thickens to your desired consistency.

Remove from heat andleave it to cool before serving.
