Sweet Vegan Green Pea Cake Recipe

This vegan green pea cake recipe is a vegetable cake for vegetarians or if you're trying something vegan, then this dessert is for you.

I love experimenting with different ingredients to come up with something sweet and healthy. Green pea cakes are packed with protein, fiber, and a host of vitamins and minerals from the peas. It's a guilt-free treat that's as good for your body as it is for your taste buds.

Ingredients for green pea cake recipe

  • Fresh or frozen green peas: These legumes add a unique flavor and vibrant color to the cake. They also provide a boost of protein, fiber, and essential nutrients.
  • Milk. Today we are making a vegan cake. A diary free milk option will be good. I used almond milk for this sweet pea cake. Other options available include coconut milk and oat milk. A plant-based milk alternative that adds moisture to the cake batter.
  • Sweetener. I used Marple syrup to sweeten this pea dessert. Marple syrup is a natural sweetener that enhances the cake's flavor. It adds sweetness without the need for refined sugar, making it a healthier choice.
  • All purpose flour. Provides structure and texture to the cake. You can also use a gluten-free flour blend for those with gluten sensitivities. Gluten free option such as oat flour, almond flour or any flour of your choice.
  • Lemon zest(optional) :Adds a hint of citrus flavor and brightness to the cake, but it's optional if you prefer a more subtle flavor profile.
  • Vanilla extract: Adds flavor and aroma to the cake, enhancing its overall taste.
  • Cooking oil. I am using coconut oil for this cake. Used as a plant-based fat to add richness and moisture to the cake. It makes the ingredients stick together.
  • Salt: Makes the other ingredients taste better and evens out the sugary flavor of the cake.
  • Baking powder: Baking powder causes the cake to expand and transform into a delicate and airy texture.

How to bake green pea cake with vanilla

First start by preheating your oven before doing other preparations. Set your oven at 175°C.

Boil your fresh green peas until soft. Drain excess water. Put them in a food processor and blend until smooth. Poor into a large mixing bowl and set aside.

Take your cake pan( I'm using a 9x13 inch cake pan) grease and flour the bottom and sides. Set aside.

Using mixing bowl with our freen pea puree, combine all your wet ingredients one by one. Add almond milk, melted coconut oil, vanilla extract, and Marple syrup. Mix to combine.

In a separate mixing bowl, combine your dry ingredients together. Mix the oat flour with, baking powder, salt and lemon zest.

Pour your wet ingredients into the dry ingredients bowl slowly as you mix ti combine. Make the batter to a thick consistency.

Pour the batter into your baking cake pan. The one you already greased. Place it in the oven and cook for around 40 to 45 minutes. To check if your sweet pea cake is ready insert a knife or a tooth pick into the cake. They should come out clean.

Once fully baked, remove from oven and allow to cool for 8 minutes. Transfer to a wireless rack and allow to cool completely.

Your cake is ready. You're free to top or glaze it with your favourite toppings.

Recipe customizations and add ins

  • You can top your cake with frosting such as vegan cream cheese frosting, whipped coconut cream, or a simple glaze made of powdered sugar and lemon juice.
  • Add in some chopped nuts such as walnuts, diary-free chocolate chips or shredded coconut.
  • If you’re not vegan and no issues with gluten, use the all purpose flour.
